The 2023 Chablis Village comes from the lieu-dit of Les Brèches de Fyé. It has a pleasant, green-apple- and pear-scented bouquet with light earthy scents. Finely balanced, the palate is fresh, clean and quite malic, though the finish is overtly simple and doesn't stick in the memory. Tasted blind at the BIVB tasting in Chablis.

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
